Here I sit.
In Ninove, on a town square. Fully installed for our 2nd bbq competition of the season. And also the 3rd because organizer Wettels on fire organizes 2 competitions back to back. So 1 time to set everything up, 2 nights of smoking. And probably going home completely exhausted
Still, I'm looking forward to it. It's a ridiculous amount of work. It took me 2.5 hours to load. I'll double-check again to make sure I didn't forget anything.
The feeling is different. Last time everything was new. Every step was a victory. Now there is an expectation. Maybe with others too, but especially with ourselves. Trying to do just as well as last time. But yes, that remains to be seen
We've analyzed some. Fine-tuned. Hopefully for improvement.
The meat trimming is done: 2 briskets. 4 Boston butts. 8 ribs. And way too much chicken.
Trim and compare. Is this better or worse than last time. Maybe it is already looking for excuses for when the result is less. Who knows. Sign of uncertainty then?
Maybe, and there is nothing wrong with that. But also with self-confidence. We know what we have to do and the atmosphere in the team is optimal.
We are prepared again. The sun is shining. Nothing to worry about. BBQing is relaxing. And stressful. But in a good way.
